This is my favorite curry !
It’s very simple curry, but sooooo yum!
Serves 2 person
Curry Leaves 12
Turmeric powder 1/2 teaspoon
Fenugreek seeds 1/4th teaspoon
Mustard seeds 1/2 teaspoon
Dried red chillies 1
Onions chopped 2 medium
Ginger-garlic paste 1 tablespoon
Coriander powder 1 tablespoon
Cumin powder 1 teaspoon
Red chilli powder 1 teaspoon
Tamarind pulp 1 tablespoon
Salt to taste
1, Put eggs in a pan with lots of water (enough to cover them and some more). Bring to a boil and then reduce heat and cook for 10-12 mins. Remove from heat and rinse in cold water. Crack and peel the eggs.
2, Heat 2 tablespoon oil in a pan.
3, Add mustard seeds, once they being to splutter add red chilli, curry leaves and fenugreek seeds.
4, Within a minute add onions and stir occasionally till they are lightly browned. Add ginger-garlic paste and mix well.
5, After 2 mins add the turmeric powder, coriander powder, cumin powder and red chilli powder and mix for 1-2 minutes.
6, Add ½ cup water and tamarind pulp. Add salt and mix. Add eggs and cook for 2-3 mins.
↓ Onions and stir occasionally till they lightly browned.
